Like a gangster movie - “fall-off-your-chair powerful”, “big, lean and mean” and full of “leather”, “cigarbox”, and “smoky, spicy warmth”. “Fresh plums in the centre” balance the “white pepper”, “nutmeg” and “liquorice finish”. Consistent firm tannin structure will work with the fruit to keep this wine fresh for a number of years to come, but well worth drinking now.
As is usual for us, we make this in a more Rhone style, emphasising elegant spicy elements underpinned with good fruit. We stay away from the trendy heavy- (often American) wooded approach and only use 2nd fill barrels. The full ripeness of the grapes at harvest is reflected in deep fruit and spice flavours. 100% open fermenter, cap punched through by hand every 4 hours. Fermentation at 30 degrees to enhance flavours and colour extraction.
