As is usual for us, we make this in a more European style, shying away from the trendy heavy-wooded approach. The full ripeness of the grapes at harvest is reflected in good fruit flavours. 100% open fermenter, Cap punched through by hand every 4 hours. Fermentation at 30 degrees to enhance flavours and colour extraction. Only 2nd fill barrels were used for wood to complement fruit.
