ak Cabernet Sauvignon 2002
“Our Shiraz Cap Classique made a very loud debut while the 2001 Sauvignon Blanc cleaned up at the cultivar competitions. We had a very rainy winter which broke the dry years.”
Tasting Notes
Brobdingnagian (pronounced brob-ding-NAG-ian) - a huge thing, immense, enormous; from Brobdingnag, the land of the giants
Winemaker Comments
Across the board 2002 has shown very low yields on the reds. Hand in hand comes lovely intense yummy flavours. Now using the mash cooler to control our temperature during production, we can allow extended skin contact for additional tannin, colour and flavour extraction. We applied our usual - only French - wood policy for Nitida, which includes more new wood in Cabernet (40%) than in other cultivars and a longer maturation period (18 months). As "brobdingnagian" insinuates, this is a bold wine developed from robust fruit and subtle but firm wood tannins.
