Our philosophy is that wine is made in the vineyard and merely bottled in the cellar, this is most definatly the case with our 2016 Chardonnay.
This Chardonnay reflects a classic cool climate style with elegant oaking enhancing complexity. Chardonnay is typically prone to uneven budding and subsequently variable fruit development. The cold, wet winter of 2015 proved most beneficial ensuring even budding and optimal ripening to harvest. Our annual southerly winds, particularly those during the growing season, ensured healthy, compact bunch. The grapes were harvested on 14th of February at 22 - 23.5˚B. The grapes were picked and whole bunch pressed to preserve the delicate floral flavours. The fermentation was initiated in a stainless steel tank and was moved to new French oak barrels as soon as the fermentation started picking up speed. After fermentation all the barrels went through malolactic fermentation. The wine spent 4 months in new oak after which it was racked and moved back to old 300L barrels for another 5 months, totalling 9 months barrel maturation. During the aging frequent battonage (stirring of the lees) was done to enhance the mouth feel.
